Italian bakery vanilla cookies with sprinkles from serious eats.
These colourful vanilla cookies are a lovely treat for any occasion. As you can imagine they are a favourite with kids. You can find the Thermomix conversion below.

ingredientsÂ
- 340g flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 170g unsalted butter
- 110g white sugar
- 60g icing sugar
- 80g coconut oil
- 1 egg
- 2 teaspoons vanilla
- About 1 cup rainbow sprinkles
Thermomix directions
- Add butter to TM bowl and if necessary soften for 5 seconds, speed 7.
- Add butterfly, sugars and oil to butter and mix for 1 minute, speed 5.
- Add egg and vanilla and mix for 30 seconds, speed 5.
- Add dry ingredients and mix for 15 seconds, speed 5.
- The dough will be very soft so wrap it in plastic wrap and refrigerate for at least one hour.
- Form dough into little balls, roll in sprinkles and bake for 20 minutes at 180 degrees celsius.
