lollipop shaped vanilla cakes decorated in chocolate
A couple of years ago I ordered a silicone cake pop mould online. They look amazing and are a lot of fun to make but very time consuming. I probably spent 2-3 hours decorating a batch of cake pops (with cooling time in between). Even with the special tray I did need to use a knife to carve the excess mixture and crumbs off the balls.
After some further research I saw recipes that crumbed a cake, mixing it with some cream cheese and then creating balls by hand from the mixture. While that would probably be the easier way to make them you would miss out on the fluffy cake texture.
I would recommend putting them together with 30 minutes – 1 hour between stages as you need to ensure that the chocolate is firmly set before moving onto the next stage. Using a Styrofoam board allows you to set the cake pops upright on a shelf in the fridge. If your cake pops aren’t able to be set upright then gently laying them flat on a board will do the trick.
Once the balls have cooled in the fridge dip the cake pop stick into melted chocolate about half way up the ball and allow to set in the fridge. This will leave a ring of chocolate on the ball and stop the ball falling off while you decorate.
Its then a matter of dipping the balls into melted chocolate again and slowly turning until the chocolate has covered the ball. I think gave them a little spin to get excess chocolate off before dipping into the sprinkles.

- 115g butter
- 115g sugar
- 3 eggs
- 115g self raising flour
- 500g chocolate to decorate each batch
- decorations such as food dye, sprinkles nonpareils, edible glitter, glitter flakes, edible pearls and jimmies
directions
- Cream together butter and sugar.
- Add eggs one at time while continuously beating mixture.
- Add flour and mix until just combined.
- Spoon into cake pop moulds and bake for 20 minutes at 180 degrees Celsius.
- Once cooked refrigerate for 2 hours before decorating.
- Melt chocolate on a ‘double boiler’.
Thermomix directions
- Mix butter and sugar together for 10 seconds on speed 5.
- Add eggs and flour, mix for 30 seconds on speed 5.
- Spoon into cake pop moulds and bake for 20 minutes in a 180 degree oven.
- Once cooled refrigerate for 2 hours before decorating.
- Place chocolate into TM bowl for 10 seconds, speed 9. Scrape down sides of bowl.
- Heat on 50 degrees for 5 minutes on speed 1.
