rocky road featuring turkish delight
I had the idea for this rocky road after making a dessert pizza and having left over ingredients. I used authentic Turkish delight in rose flavour.
It has a great combination of textures and flavours. If you don’t want to cut the marshmallows you could use mini marshmallows.
ingredients
200g milk chocolate
1 tablespoon coconut oil
400g Turkish Delight
2 tablespoons sliced pistachios
250g marshmallows
directions
- Melt chocolate and coconut oil together on a double boiler or in the microwave for 30 second incraments.
- Chop marshmallows and Turkish Delight into small pieces.
- Combine all ingredients, pour into a small, lined tin and refrigerate until set.
Thermomix directions
- Place chocolate into TM bowl for 10 seconds, speed 9. Scrape down sides.
- Add coconut oil and heat at 50 degrees, 5minutes, 50 degrees, speed 1. While chocolate is melting chop marshmallows and Turkish Delight into small pieces.
- Heat for a further 2minutes, 50 degrees, reverse soft speed. Start adding the other ingredients and keep mixing until all covered in chocolate.
- Transfer to a small, lined tin and refrigerate until set.
