gluten free chocolate bars with coconut flour by Ambitious Kitchen
I have a love hate relationship with coconut flour. I’ve never been overly impressed with it and find anything that I make with it too dense. These gluten free chocolate bars have swayed me back to the coconut flour corner.
I found this recipe for the best coconut flour chocolate chunk bars on the Ambitious Kitchen website and the writer had similar coconut flour experiences to me.
After reading the recipe I decided to give coconut flour another go and was pleasantly surprised by the results.
Thermomix directions
- Put the coconut oil, honey, vanilla, milk (I didn’t use almond milk) and eggs in the TM bowl and mixed for 10 seconds, speed 5.
- Add the coconut flour and baking soda and mixed for 5 seconds, speed 3.
- Stir through the dark chocolate chips.
The result was a soggy looking paste that was incredibly hard to spread around. You just have to persist. I baked it for 20 minutes but it needed another 5 minutes until the middle was brown and spongy.
I was super impressed with the results!
