strawberry lemonade

Selling lemonade is a rite of passage for little kids. My kids had a stall one Christmas a few years back and half the money they raised went to the Kmart wishing tree as part of annual family Christmas charity donation. Last school holidays, my eldest and a group of friends in the neighbourhood created a lemonade stand selling at the local community centre. Two weeks of lemon picking, lemon juicing, cordial mess making throughout parents kitchens and the kids raised over $200 from their efforts.

This school holidays the gang again decided they wanted to make lemonade to sell again. I wasn’t keen to allow my kitchen to be covered in sticky messy from the cupboards to the floorboards. I decided to help out by making strawberry lemonade, which they could add to soda water to sell without the need for the daily lemon hunt and rotating between houses for stove tops.

Lemon cordial is super easy to make with: one cup lemon juice, two cups water, two cup sugars. Cooked over a low heat until the sugar is dissolved. You can add strawberries or raspberries to the mix for an alternative taste that is not any delicious and refreshing, but parents can enjoy with a shot of Bacardi too. Strawberry lemonade is a perfect spring time drink when strawberries are ready for picking and lemons are still on the trees.

ingredients
250g strawberries (washed, hulled and cut in half)
250ml lemon juice (approx 5 lemons)
500ml water
500g sugar

directions
1. Blend strawberries and water into a puree.
2. Strain strawberry mixture through sieve into a pot.
3. Juice the lemons and strain into pot through sieve.
4. Over low heat slowly bring mixture to the boil stirring regularly to avoid sugar sticking to the bottom. This should take 10-15minutes.
5. Once simmering allow to hold a rapid boil for 2 minutes.
6. Allow to cool and add to sterilised bottle.

The mixture makes just under 1.5 litres of cordial and can be added to soda water to make lemonade.
