raw broccoli and bacon salad is the perfect addition to any BBQ with it’s crunchy texture and tangy dressing
At one of our kids Christmas craft days a friend of ours brought over a delicious bacon broccoli salad. It was a great combination of flavours and textures with the crunchy raw broccoli, bacon, sunflower seeds and a mayonnaise dressing. When I asked about the ingredients I knew it was something that I needed to replicate at home. I made this recipe for our Christmas lunch this year and recommend halving it for a smaller crowd. We normally make our own mayonnaise using avocado oil but when we need a store bought version the Japanese brand Kewpie is our go-to.
ingredients
- 2 heads broccoli
- 6 rashers of bacon
- 2 shallots
- 75g pine nuts
- 1 cup mayonnaise
- 1/4 cup white wine vinegar
- 1/2 tsp horseradish cream
directions
- Cook the bacon using your preferred method. Mine is on lined baking trays in a 180c/355f oven for 20 to 25 minutes until crispy. Allow the bacon to cool and cut into thin strips.
- Cut the broccoli into small bite sized florets.
- Finely dice the shallots and add to a large bowl with broccoli, bacon and pine nuts.
- Mix mayonnaise, vinegar and horseradish cream until combined (Dijon mayonnaise can be used as an alternative).
- Pour dressing over the broccoli, bacon and pine nuts and mix until well combined.
- Refrigerate until serving.
