raspberry bars topped with dark chocolate
I have always had a sweet tooth and enjoy having a sweet treat after dinner or when the kids have climbed into bed. Experimenting with clean treats to reduce our sugar intake is something we continue to do however we still like to enjoy some chocolatey goodness. I have also made this recipe into bliss balls topped with freeze dried raspberries.
Whether you choose to make the bars or the balls they are easy to make in a food processor or Thermomix by blending all the ingredients together until they form a thick paste. From there you can either dip them in chocolate or coat with freeze dried raspberries.
ingredients
- 200g frozen raspberries
- 100g almond meal
- 65g shredded coconut
- 20g vanilla protein powder (optional)
- 20g maple syrup
- 100g dark chocolate or freeze dried raspberries
directions
- Add all ingredients (except for the chocolate) into a food processor and mix until combined. Thermomix 30 seconds, speed 5.
- Press into silicone bar moulds and place in freezer until set (approx 1hour).
- Melt chocolate using your preferred method (double boiler on stove, Thermomix or microwave).
- Dip the top of frozen bars into chocolate and place back into the freezer to set or simply top with the raspberries.
- Store in the freezer. Allow the bars to sit at room temperature for 10 to15 minutes before serving.
