raw, no bake and gluten free lemon slice by Wholefood Simply
This tasty slice from Wholefood Simply has a great lemon flavour complimented with coconut and cashews. The base has a little crunch from the cashews and the topping has a smooth and creamy texture. The sweetness in the slice comes from dates, maple syrup and honey. What’s also appealing about this lemon cheesecake slice is that it is very easy to make in a food processor or Thermomix. The slice also happens to be dairy, gluten and refined sugar free as well as Paleo and Vegan friendly.

Thermomix directions
- Add the base ingredients to the TM bowl and mix for 20 seconds, speed 8.
- Spread out evenly over the baking tin and put in the fridge while you make the topping.
- Clean out the TM bowl, add the topping ingredients and mix for 15 seconds, speed 6.
- Add the topping over base, spread out evenly and return to the fridge to set.
- After at least 30 minutes slice and enjoy your lemon slice!
