Super quick mug cake with homemade strawberry jam and peanut butter
We love a good mug cake and we also love making strawberry jam, particularly at Christmas time for hampers. We’ve combined the two here and drawn on the American mash up of peanut butter and jam.
The beauty of mug cakes are they’re simplicity. Simply throw everything into the mug, mix well and heat. Another great thing about mug cakes is experimenting with different ingredients, there’s an endless amount of options. You can find the link to our Nutella mug cake below.
ingredients
- 1.5 tbsp coconut oil
- 4 tbsp almond flour
- 1/2 tsp baking powder
- 1 egg
- 1 tbsp peanut butter
- 1.5 tbsp strawberry jam
- 1 tbsp maple syrup
directions
- If the coconut oil is solid, spoon into the mug you will be using and microwave until liquid. About 30 seconds.
- Add all the other ingredients except the jam and mix well until all combined.
- Add the strawberry jam into the middle of the mixture.
- Microwave for about 50-60 seconds depending on the wattage of your microwave. 50 seconds for our 1000w does the job.
