These apple pie crumb bars from Golden Barrel are delicious. They make for a great dessert that will impress both anyone with special dietary requirements as well as those without. With a sweet shortbread base, tart apple filling and crunchy nut topping they taste especially great served warm. I have made the recipe several times using the Golden Barrel recipe and decided to simplify it by making it in the Thermomix. If you want a chunky apple filling I suggest chopping the apples by hand. For a finer result chop in the Thermomix.
Check out the Golden Barrel recipe for the list of ingredients. Find our Thermomix directions below. I have included the quantities to make it even easier. I used mixed spice as a replacement to apple pie spice which is mostly cinnamon with a hint of allspice and nutmeg.
Thermomix directions:
for the base
- Add 200g almond meal, 20g coconut flour, 75g coconut oil, 100g maple syrup and salt to TM bowl. Mix for 10 seconds, speed 5.
- Transfer 1/4 of the mixture to a medium size bowl.
- Press the rest of the base mixture into a lined baking tin and bake according to the recipe.
- Wipe out TM bowl with paper towel – no need to wash.
for the filling
- Peel and core apples. Add to TM bowl.
- Set machine to close lid option and press turbo twice for two quick pulses.
- Add spice and arrowroot flour and scrape down apple mixture to incorporate the flour.
- Add 70g maple syrup and heat on 100 degrees, 6 minutes, reverse soft speed.
- Pour over baked base, add topping and bake according to Golden Barrel recipe.
- Enjoy your apple pie crumb bars!
