homemade honeycomb made with 3 ingredients
As a kid my favourite chocolate bar was a Crunchie. Once upon a time the Cadbury Christmas Stocking had a special edition white chocolate Crunchie and eating it was one of the highlights of my Christmas day. One of our most popular recipes on the blog has been our Popcorn and honeycomb rocky road. So popular in fact that Thermomix Australia head office have made it and loved it.
Unfortunately I can no longer enjoy the Crunchies as I avoid wheat glucose syrup so I decided to make my own. When searching for a recipe I found many that didn’t even include honey in the list of ingredients. Either that or they included a small amount of honey with a large amount of golden syrup. I decided to create my own using sugar, raw honey and bi-carb of soda version.
ingredients
- 150g sugar
- 125g honey (1/3 cup)
- 2 tsp bicarb of soda (sifted)
directions
- Melt sugar and honey together in a large pot on medium heat.
- Continue to stir the mixture until it reaches 150c/300f. At this temperature the sugar and honey mixture will caramelise and change colour. I used a Thermapen to measure the temperature and found the digital display and quick read to be great which means I can retire my glass sweet thermometer.
- Once the mixture reaches the required temperature remove from heat and whisk in sifted bicarb of soda being careful of the hot mixture while it foams. Continue mixing until completely combined.
- Working quickly, transfer the mixture to a lined baking tray and allow to set.
- When cleaning up I suggest filling the pot with water and returning it to the stove to dissolve the set candy mixture.
Once set, around 20 minutes, I cut the honeycomb into small pieces to make my own crunchie Easter eggs with three types of chocolate as well as a batch of Popcorn and Honeycomb Rocky Road.
