muffins that are great for breakfast, morning tea or an afternoon snack
Sometimes I have a craving for a good savoury muffin and homemade is the only way to go. Whether breakfast, lunch or brunch these muffins pack a flavoursome punch. I love the smell of rosemary in my kitchen and we are big bacon fans… then again who isn’t! Have a go at making your own bacon, here’s our recipe. My go to savoury muffin is normally my cheese yogurt muffins which are equally as delicious with the addition of bacon. I make the cheese muffins in mini muffin tins for bite size treats however this time I wanted something more substantial.
While this recipe is perfect for making in a Thermomix to chop, melt and mix all in one these can easily be made with one bowl and spoon. These were made gluten free using gluten free flour and baking powder.
ingredients
- 200g bacon
- 1 tsp fresh thyme
- 1 Tbl fresh rosemary
- 50g parmesan cheese
- 100g cheddar cheese
- 80g butter
- 370g flour
- 2 tsp baking powder
- 2 eggs
- 200g milk
directions
- Cook the bacon using your preferred method. Mine is placing the strips on baking trays in a 200c/390f oven for approximately 20 minutes. Once cooled roughly chop.
- Chop the thyme and rosemary.
- Grate parmesan and cheddar cheese.
- Sift flour and baking powder. Combine with cheese, bacon and herbs.
- Whisk milk, melted butter and eggs together.
- Combine milk mixture with flour mixture.
- Spoon into greased muffin tin and bake for 20 minutes at 200c/390f.
Thermomix directions
- Cook the bacon using your preferred method. Mine is placing the strips on baking trays in a 200c/390f oven for approximately 20 minutes. Once cooled roughly chop.
- Chop the thyme and rosemary but removing any twigs and chop 10 seconds, speed 7. Remove from Thermomix and place in a large bowl.
- Add parmesan cheese to TM bowl and chop 10 seconds, speed 7. Add cheddar cheese and mix for another 10 seconds, speed 7. Remove from Thermomix and place in the bowl with the herbs.
- Add butter to TM bowl and melt at 100 degrees, 2 minutes, speed 3.
- Add all other ingredients and mix for 10 seconds, speed 5.
- Spoon into greased muffin tin and bake for 20 minutes at 200c/390f.
- Enjoy your herb, cheese and bacon muffins!
They’re best served warm straight out of the oven.
