gluten free peanut chocolate biscuits
Martha Stewart’s flourless peanut chocolate cookies were the inspiration for these gluten free biscuits and they taste as good as they sound! I have made them a few times with some minor changes to Martha’s recipe and converted the recipe for Thermomix.
I make them half the size that Martha recommends as they are just too rich when made with a full tablespoon. I also leave out the additional salt as they are salty enough from the peanuts. The peanuts are also chopped.
ingredients:
- 280g peanut butter
- 160g sugar
- 1/2 tsp baking soda
- 1 egg
- 70g peanuts
- 120g dark chocolate chips
Thermomix directions:
- Add peanut butter, sugar, egg, baking soda and salt to TM bowl and mix for 10 seconds, speed 5.
- Add peanuts and mix for 5 seconds, speed 5.
- Add choc chips and mix on reverse speed for 10 seconds, speed 2.
- Use a teaspoon to form small balls. The mixture is quite crumbly and you need to squeeze it together.
- Bake for 12 minutes at 180 degrees Celsius.
