dairy free, gluten free and naturally sweetened lemon bars that convert easily for the Thermomix and taste like a baked cheesecake
I have been looking for some dairy free, gluten free, refined sugar free treats since coming off the Whole30 program. I have a lemon tree in full fruit mode and I have also been making my own coconut milk and saving the solid coconut cream in the freezer. I stumbled across these delicious treats on Instagram and they seemed too good to pass up especially considering I already had all the ingredients in the cupboard. These lemon bars were so simple to make in the Thermomix.

For the base, I used quinoa flakes instead of gluten free oats. As the base takes 20 minutes to bake hold off from making the filling until the base is out of the oven and cooling as it only takes 1 minute to mix the filling in the Thermomix.
Thermomix directions
for the base
- Add all base ingredients to TM bowl and mix for 15 seconds, speed 5. Press into a lined tin and bake as per instructions and bake.
- Rinse the the TM bowl and dry thoroughly.
for the filling
- Add all ingredients to TM bowl and mix for 1 minute on speed 7. Pour on top of base and bake.
Allow to cool in the fridge overnight then slice and enjoy your lemon bars!
