chocolate carrot cake
This is my go to chocolate cake recipe. I normally make it in a ring shaped tin and pour the warm icing over the top. The moistness of the cake comes from the carrot and the chocolate icing forms a hard shell. Kids and adults love it!
To make the chocolate carrot construction cake I used 2.5 times the ingredients to make two solid cakes – one 26cm and the other 22cm – baked for 1 hour.
For the dinosaur cake I used three times the ingredients resulting in 2 26cm cakes. Again, bake for 1 hour.
For both birthday cakes the icing was made in my Thermomix using the following recipe (minus the espresso powder) – Perfect Chocolate Buttercream Frosting
decorations
The decorations for the construction cake are mini cat trucks bought from Toys R Us, fun sized snickers, crunchies, maltesers and kit kats.
Decorations for dinosaur cake are melted chocolate, crumbled chocolate chip cookies, fondant icing and plastic dinosaurs.

- 190gsugar
- 180g butter
- 2eggs
- 30ggolden syrup
- 230g self raising flour
- 1/2teaspoonbicarb of soda
- 25gcocoa
- 180gmilk
- 100g butter
- 150gmilk chocolate
directions

- Grate carrot and orange peel – set aside.
- Cream butter and sugar together, add eggs and golden syrup and beat until combined.
- Sift dry ingredients together.
- Add all ingredients to the butter/egg mixture and stir until combined.
- Pour into a 26cm ring shaped tin and bake for 50 minutes at 180 degrees celsius
icing
- In a double boiler melt chocolate and butter together until smooth. Pour over cake or allow to cool and spread evenly onto cake.
Thermomix directions

- Grate carrots on speed 7 for 5 seconds. Set aside.
- Peel orange rind and add to TM bowl with sugar. Blend for 5 seconds on speed 7.
- Add butter to TM bowl with sugar and orange rind. Mix for 10 seconds on speed 7.
- Add eggs and golden syrup and mix for 5 seconds on speed 7.
- Add all other ingredients, mix for 10 seconds on speed 5, scrape down bowl and mix for 5 seconds on speed 7.
- Pour into ring shaped tin and bake for 50 minutes at 180 degrees celsius.
icing
- Grate chocolate on speed 7 for 5 seconds.
- Add butter and melt together – 50 degrees, 3 minutes, speed 1. You can either wait for icing to harden and spread on cake, or pour over a cool cake.
