chicken lollipops (drumsticks) smoked and glazed
Chicken lollipops not only taste great, they also look pretty cool too. Despite their appearance they’re actually very quick to prepare and you’ll be barbecuing in no time.
ingredients
- chicken drumsticks
- your favourite chicken seasoning
- BBQ sauce
- butter
- honey or maple syrup
directions
- Using a sharp knife make a cut around the leg just below the knuckle, cutting through the skin and tendons.
- Pull the meat down towards the fleshy end of the leg. You can be quite forceful here, there’s no danger of pulling the flesh clean off.
- Pull the remaining skin and cartilage up and over the knuckle and discard. Wrap some foil around the exposed knuckle to prevent it from turning black. This is just for presentation purposes.
- Lightly brush the drummies with mayo and add the seasoning.
- Set up your barbecue for indirect cooking and aim for 350f/160c.
- Add the lollipops, a chunk of wood if you want to add a little smoke and cook until the internal temperature reaches 160f/70c.
- Meanwhile add the BBQ sauce, butter and honey to a small bowl and mix well. There’s no set amounts here but something like a ratio of 3:1:1 will work.
- Take the drummies off the BBQ and brush the sauce mix over the chicken.
- Return to the BBQ and cook until the internal temperature reaches 165f/74c.
