chewy choc chip gluten free cookies made with dates, maple syrup, coconut and gluten free flour
Cookies always get a good run in our kitchen, in particular ones with choc chips. Regular wheat based flour is no longer found in our cupboard so as a replacement this recipe uses a blend of coconut and Bob’s Red Mill Gluten Free All Purpose Baking Flour. The sweetness in the cookies comes from dates, maple syrup and of course those dark choccy chips.
The mixture is easily made in a Thermomix or food processor and after a quick 15 minutes in the oven with a little rest they are ready for eating.
ingredients
- 6 medjool dates
- 2 tbsp almond milk
- 1/2 cup coconut flour
- 1/2 cup gluten free flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/3 cup coconut oil (melted)
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 eggs
- 1/3 cup dark chocolate chips

- Preheat oven to 180c/355f.
- Add dates and milk to food processor and blend until a paste forms.
- Add the coconut oil, maple syrup, vanilla and eggs and blend until all combined and smooth.
- Add the flours, cinnamon, baking soda and powder and mix through at a low speed until all combined.
- Scoop out a tablespoon of mixture at a time, roll into a ball and place on a lined baking tray.
- Bake for 15 minutes.
- Allow to cool before getting stuck into your chewy choc chip cookies!
Thermomix directions
- Preheat oven to 180c/355f.
- Add dates and milk to TM bowl and mix for 5 seconds, speed 8. Scrape down sides of bowl and repeat.
- Add coconut oil, maple syrup, vanilla and eggs and mix for 10 seconds, speed 8.
- Add the flours, cinnamon, baking soda and powder and mix for 10 seconds, speed 3. Scrape down sides of bowl and repeat.
- Scoop out a tablespoon of mixture at a time, roll into a ball and place on a lined baking tray.
- Bake for 15 minutes.
- Allow to cool before getting stuck into your chewy choc chip cookies!
