a tasty potato salad with… cauliflower
If you aren’t eating potato for whatever reason or you’re looking for a change but still want to enjoy a creamy mayonnaise salad then cauliflower is a great alternative. I used my regular potato salad dressing recipe and added it to some steamed cauliflower. It was delicious. I think that it would taste even better with roasted cauliflower.
Its very simple to make and tastes great with homemade mayonnaise or aioli.
ingredients
- 1 whole cauliflower cut into small florets
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tsp whole grain mustard
- 1 tsp finely chopped dill
- chives slices thinly for garnish
directions
- Cook cauliflower using your preferred method. Leave to cool. If steamed or boiled pat dry.
- Mix together mayonnaise, sour cream and whole grain mustard until combined.
- Stir dressing through the cauliflower and sprinkle chives on top.
- Enjoy your cauliflower potato salad!
