carrot soup served with hazelnut dukkah and yogurt – adapted from Gourmet Traveller
Making soup in my Thermomix is just so easy and I love this carrot soup recipe from Gourmet Traveller. The carrots were quite sweet and the combination of all the flavours was spot on! Here’s the link…

Thermomix directions

- Place all the spices in TM bowl, dry roast on varoma, 5 minutes, speed 3.
- Blend for one minute increasing slowly to speed 9.
- Add nuts and oil and blend for 5 seconds, speed 5.

- Peel carrots – chop in TM bowl 6 seconds, speed 6. Transfer to a separate bowl.
- Put onion and garlic in TM bowl, chop for 5 seconds, speed 7.
- Add oil and coriander and cook on varoma, 5 min, speed 2.
- Add carrots, honey, stock, salt and paper and cook on 100 degrees, 10 minutes, speed 1.
- Put it on for another 10 minutes, 100 degrees, speed 2 and remove the measuring cup and place basket on top.
- Blend for 30 seconds slowly increasing to speed 7.
Serve with dukkah and yogurt
