carrot cake muffins glazed with spiced honey glaze by Donna Hay
Carrot cake muffins with spiced honey glaze from Donna Hay are the perfect combination of sweet, savoury and a hint of spice. They are also a cute way of including cream cheese as opposed icing.
I did make the glaze on the stove but have included a Thermomix version below.

Thermomix directions

- Chop the dates – 10 seconds, speed 7 (I didn’t use fresh dates so you would only need turbo once or twice with fresh ones). Place in separate bowl with boiling water (I added 1 tsp of baking soda to help soften the dates)
- Add roughly cut carrots to TM bowl and chop for 2 second, speed 5.
- Add all other ingredients to the bowl and mix for 10 seconds, reverse speed 5 – do a final stir with the spatula to make sure everything is combined.
- Mix cream cheese and extra castor sugar in a small bowl.
- Place a spoon of batter into each muffin hole, followed by a spoon of cream cheese and topped with another spoonful of batter.
- Bake 🙂
glaze
- Place the honey and water into the TM bowl and heat 100 degrees, 3 minutes, speed 3.
- Add the mixed spice and mix for 5 seconds, speed 3.
- Pour the warm glaze over the muffins to serve.
The recipe says that it makes 12 but I ended up with 16.
