quick and easy chopped broccoli salad
One of my favourite salads to make in the Thermomix is a broccoli salad from the Thermomix Recipe Community. Broccoli, apple and capsicum with a honey, mustard and vinegar dressing. It is the easiest thing to pop all the ingredients into the TM bowl and let the machine do the work. Over the years I have added to the recipe and made a few changes.
While I am sure you can chop all the ingredients by hand it is much easier and time effective to pop the majority into a food processor and let the machine chop for you.
ingredients
- broccoli florets from medium sized broccoli
- 1 red capsicum deseeded and cut in four
- 1 red apple cored and cut in four
- 30 grams pine nuts
- 15 grams olive oil
- 15 grams white balsamic vinegar
- 1 teaspoon honey
- 1 small 125g can tinned corn kernels (or fresh corn if you have it)
- half avocado cut into small pieces
- 125g fresh strawberries cut into four
- 10 green olives pitted and slices
directions
- Cut broccoli, capsicum and apple into small pieces.
- Mix in pine nuts, olive oil, white balsamic vinegar, honey and corn.
- Garnish with avocado, strawberries and olive slices.
Thermomix directions
- Place broccoli, capsicum, apple, pine nuts, olive oil, white balsamic vinegar and honey into TM bowl and mix for 5 seconds, speed 4.
- Garnish with avocado, strawberries and olive slices.
This is a great salad to serve with a BBQ and perfect for entertaining a crowd as quick and easy to make.
