delicious and decadent Bailey’s Irish Cream brownies
I recently found myself in an unusual predicament. I was gifted a bottle of Bailey’s Irish Cream for Christmas and while at the time I was excited, it has spent the last 10 months in the cupboard. I decided that enough was enough and it was time to create a recipe to use it for baking. The result… a delicious and decadent brownie with a hint of Bailey’s. Whilst this may not be our healthiest brownies recipe, we think it’s ok to lash out every now and then.
The brownies are best served warm with a teaspoon of white chocolate Bailey’s ganache on the side.
ingredients
for the brownies
- 100g dark chocolate
- 100g Bailey’s Irish Cream
- 75g milk
- 90g butter (softened – if not using a Thermomix)
- 100g brown sugar
- 2 eggs
- 100g self raising flour
- 30g cocoa
- 100g almond meal (I used roasted almond pulp left over from makinghomemade almond milk)
- 50g dark chocolate chips
for the white chocolate Bailey’s ganache
- 150g white chocolate
- 60g cream
- 2 Tablespoons Baileys Irish Cream
directions
for the brownies
- Melt chocolate, Bailey’s and milk in a small sauce pan over a low heat.
- Beat sugar, butter and eggs together until light and fluffy.
- Add flour, almond meal, cocoa and chocolate mixture to the sugar/egg mixture and mix until just combined.
- Stir through chocolate chips.
- Pour mixture into square baking tin. Bake for 35 min at 150 degrees celsius (fan forced oven).
for the white chocolate Bailey’s ganache
- In a small pot bring cream to a boil. Add chocolate stirring until all melted and combined.
- Stir through Bailey’s until mixed thoroughly.
- Allow ganache to set in the fridge (3-4 hours) prior to serving.
- Enjoy your Bailey’s brownies!
Thermomix directions
for the brownies
- Place chocolate, Bailey’s and milk in TM bowl and melt at 50 degrees, 2 minutes, speed 2. Transfer to a separate bowl.
- Add butter, sugar and eggs to TM bowl and mix for 1 minute, speed 4.
- Add flour, almond meal, cocoa and chocolate mixture to TM bowl and mix for 10 seconds, speed 5.
- Pour mixture into square baking tin. Bake for 35 min at 150 degrees celsius (fan forced oven).
for the chocolate ganache
- Put chocolate and cream into TM bowl. Melt for 2min, 50 degrees at speed 2.
- Stir through Bailey’s until mixed thoroughly.
- Allow ganache to set in the fridge (3-4 hours) prior to serving.
- Enjoy your Bailey’s brownies!
