Thermomix conversion for these tasty, healthy treats
We’re always on the hunt for gluten free, clean eating treats. With a lemon tree in the backyard and plenty of coconut in the pantry a quick search found these cookies by Making Thyme for Health. Simple and quick to whip up in the Thermomix they make for a great snack.

Thermomix directions
- Add the coconut sugar and oil to the TM bowl with the butterfly attachment. Mix for 1 minute, speed 6.
- Add the vanilla extract, lemon zest, lemon juice and almond milk to the oil and sugar blend and mix for 15 seconds, speed 6.
- With the machine running on speed 2 add the remaining ingredients. Run for 30 seconds then scrape down the bowl and repeat for 10 seconds until all the ingredients have combined into a dough.
- Follow the baking instructions and enjoy your lemon coconut cookies!
